Preheat oven 375 F

Wash carrots, leaving the skin on and removing the leafy top (leave a small green sprout on for color)

In a small bowl, add oil, salt, and ginger

Place carrots on a parchment-lined baking sheet and drizzle oil mixture over.

Shake the tray to ensure the carrots are covered with oil mixture.

Roast for 30-40 minutes or until able to poke with a fork. Enjoy!
