18 oz or 2 cups chopped butternut squash
1 celery stick
2 T minced parsley
2 T Green Onion
1/2 carrot
1/3-14 coconut milk
1/2 tsp salt
1/2 tso Ginger
4 cups water
Place diced butternut squash in boiling water and cook until tender, about 20 minutes. Strain but reserve liquid and allow to cool. Place cooked butternut squash, coconut milk and vegetables in Vitamix. Process until smooth. If desired, add additional reserve liquid for thinner consistency. Garnish with a sprig of parsley. Enjoy!
